Month of Gratitude

Day 6: Im grateful for having lazy beautiful Sundays. I love to get up and teach yoga on Sunday’s come home cook brunch then take a nap with the dogs. Sunday is my favorite day. I get to be lazy or at least try to take the time to be as lazy as possible.

Didn’t get much done but making chicken noodle soup, watched a movie or 2 and played with the dogs. My kind of Sunday.

Month of Gratitude

I’m not normally a daily blogger. I’m also getting a bit of a late start on the month but hey. I’m going to give this a try anyhow. This month started kinda crazy.

Day 1: at 3am our female boxer went into labor. We were expecting 7 puppies and we have 8. It has been many late nights here with little sleep. Day 1 would be the gratitude I feel for my dogs who are my kids and how much love is in our home now since it has grown with 8 little ones in it.

Day 2: I’m grateful for my job and the understanding that I can take off days like today to spend time with my family and welcome the new puppies into the world.

Day 3: I’m grateful for being welcomed into the Lawton Fort Sill Chamber of Commerce Red Coats. This is a position that I feel is very important in the community. I’m glad that they have all welcomed me into their group. I hope that I can give back to them as much as I possibly can.

Day 4: I’m grateful for hot tea, warm puppies and a husband that loves me even thought I’m sick and grumpy. I tend to get a bit whiney and bitchy when I don’t feel good. I’m just glad that he can see past that and just do whatever needs to be done to make me happy. Yes I’m spoiled.

This brings us to Day 5: Im grateful for my mother in law and her being able to take Drake(our male boxer) while Kali was in labor. Drake has been at her house since the puppies came. It’s nice to have a family member close that can watch one of them when we need it. Like I said these are our children.

Chicken Pot Pie That is Weight Watchers Friendly

This is the recipe that I have been using for a couple of years now. It’s Weight Watcher friendly which means its healthy too. My husband loves it. I take out the mushrooms and onions(he doesn’t like them) and add more mixed veggies. Whatever I usually have on hand at the moment. It quick enough to make on a week night too. Hope you enjoy it!! Have fun with it and add more of the stuff that your family likes. I always do.

We made this comfort food classic lighter with reduced-fat crescent roll dough and a skim milk-based cream sauce. It totally hits the spot.

Ingredients
2 serving(s) butter-flavour cooking spray
1 tsp butter
1 small onion(s), chopped
2 cup(s) mushroom(s), sliced
1/4 tsp paprika
1/4 tsp dried thyme, crushed
1/2 tsp table salt, or more to taste
1/4 tsp black pepper
2 cup(s) frozen mixed vegetables
1 cup(s) canned chicken broth
3 cup(s) Chicken breast without skin, roasted, chopped (chopped)
2 Tbsp all-purpose flour
1/2 cup(s) fat-free evaporated milk, divided
4 roll(s) reduced-fat crescent roll dough, unrolled
Instructions

Preheat oven to 375ºF. Coat a 10-inch round shallow baking dish with cooking spray.

Coat a large pot with cooking spray. Add butter and melt over medium heat. Add onion and mushrooms and cook, until tender, stirring frequently, about 5 minutes. Stir in paprika, thyme, salt and pepper. Add vegetables, broth and chicken. Cover and simmer 15 minutes.

In a small cup, combine flour and 1/4 cup of evaporated milk; stir into chicken mixture. Cook over medium heat until thickened, stirring constantly, about 2 minutes. Stir in remaining 1/4 cup of evaporated milk and cook until mixture is slightly thickened, about 2 to 3 minutes more.

Spoon chicken mixture into prepared baking dish. Unroll crescent rolls and arrange dough around inside edge of baking dish to form a border (there will be a hole in the middle). Bake until rolls are golden brown and filling is bubbly, about 15 minutes. Cut into 6 pieces and serve.

Notes: Make this recipe to your family’s taste with different frozen vegetable blends such as an Asian mix or bell pepper and onion strips.

Smash It

Okay I have never been the ‘scrapbooking’ kinda girl. I do have a really bad habit of ripping out pages in magazines of things that I like or would like to do. I had several boxes full of pages in fact that I had ripped out of various magazines.

I came across the Smash Book through Pinterest (another weird new obsession). I loved the idea. I just got mine on Friday and this all I have done all weekend. Finally a place that I can do or put all these ideas in together.

I’m hooked is all I have to say. I will be going to see if I can find other things that go with the book this week. So if your are a nerd like me then go get one! They are awesome.

Cancer Sucks

At the beginning of August our older dog Drake was diagnosed with cancer. The vet couldn’t ever get a good sample to send off to the lab so she basically told us it was the worst. It’s in his mandible he’s 10 years old. I ask the vet what she would do if it were her dog. She told us to manage pain and make him as happy and comfortable as possible.

The Vet said that this form of cancer is generally in limbs of animals. If they amputate from where the tumor is then they usually only give them 6 months tops to live. Since it was in his head then it would spread quicker. We have been preparing for the worst. I have never owned anything long enough for it to die on me. I haven’t had to deal with death and watching something die ever. I have technically been with the dog longer than my husband since he’s been on many deployments. I have never seen my husband so upset. Which is understandable.

Last Friday we took Drake in to get a check up. The Vet honestly looked surprised that he was doing so well. Since the initial diagnosis our female Kali has gone in heat. We are hoping that we get a Drake Jr out of the bunch if she is prego. The Vet is now thinking that it might not be the ‘bad’ cancer that she originally thought it was. I’m just happy that we are going to get to keep him around a little longer than we had hoped in the beginning.

Since we have found out about our dog. Several people who I ‘know’ have gotten some of the same news. I had no idea that cancer was this bad in dogs now days. Thank you all for your thoughts and prayers. Whatever we are doing seems to be working so I’m just going to keep on doing that.

I just wanted to share what I have learned from this experience. Don’t ever let a day go by with out you letting the people or pets in this case not know how much you love them. Give them that extra hug and scratch. They will love you even more for it.
